Why Binchotan?

Binchotan charcoal emits significantly more far-infrared radiation than regular charcoal. This radiation penetrates deep into the ingredients, creating a crispy exterior while keeping the inside perfectly juicy. The delicate marbling of Hida beef slowly melts under binchotan's steady high heat, producing a melt-in-your-mouth texture.

An Irori-Inspired Japanese Space

HIDASHI's interior draws inspiration from the traditional Japanese irori (sunken hearth). With 8 counter seats and 20 table seats, the intimate space allows guests to watch skilled artisans grill each piece to perfection.
